Hi Ric,
The metal fuel lines are not the problem as long as you make sure they are not rubbing, chaffing, or getting cut be an edge of engine tin.  If you want to get less rust problem, then go with stainless steel.  You can install a stock reserve tap/valve at the gas tank outlet, and use that to shut off fuel to the engine or just when changing flex fuel line.  You can add a stock control cable, or even one from a lawn mower to flip the switch in the back seat area, or just slide under the bus to switch it by hand.

Also start a book mark with various maintenance scheduled things on it so you can keep better track of things.  Then at a glance you can see when you did maintenance and not have to dig thru the book to find such.
